Start by Measuring the Right Ingredients for Fresh Pasta Dough

Fresh pasta starts with just three ingredients: flour, eggs, and a pinch of salt. Measure two cups of flour onto a clean surface and create a well in the center. Crack in three large eggs and begin mixing with a fork, slowly drawing the flour inward until a sticky dough forms. If the pasta dough is too dry, add a splash of water and sprinkle in more flour if it is too wet.

Knead the Dough Until It Becomes Smooth and Elastic

Kneading activates the gluten and gives pasta its signature texture. Work the dough on a floured surface for 8–10 minutes until it feels smooth and elastic. Press the dough gently with your finger and it should bounce back. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Roll the Dough Thin and Cut the Pasta into Your Desired Shape or Style

Cut the rested dough into quarters. Flatten each piece with a rolling pin or feed it through a pasta machine. Keep dusting with flour to prevent sticking. You’re aiming for sheets about 1–2mm thick, depending on the pasta style. Slice the sheets into fettuccine, tagliatelle, or lasagna layers. If you’re feeling creative, try forming shapes like farfalle or use a ravioli stamp for stuffed pasta.

Cook the Pasta in Salted Water and Serve Immediately

Bring a pot of salted water to a boil. Fresh pasta cooks fast (usually 2 to 4 minutes). Drain and serve it hot with your favorite sauce.
